2 fillets cooked, flaked salmon
3 hard-boiled eggs, crushed
1 red or yellow bell pepper, diced
1- 2 cucumbers diced
1/3 cup chopped onions
3-4 tablespoons olive oil mayonnaise, or enough to moisten
1/8 teaspoon cayenne pepper
Directions:
In a bowl, toss the salmon and crushed hard-boiled eggs. In another bowl, mix the bell pepper, cucumber, onion, and mayonnaise. Add additional seasonings and stir to combine. Pour over salmon, add freshly squeezed organic lemon juice, and toss lightly together. Serve over organic spinach or finely chopped kale.
