Ingredients:
1/2 cup raw ground cashews
2 teaspoons extra virgin coconut oil
1 medium onion, diced
1 large head cauliflower, cut into 1/2-inch pieces
1 (14-ounce) coconut milk
2 tablespoons curry powder
2 teaspoons ground turmeric
1/2 teaspoon stevia
1/2 teaspoon ground cinnamon
Celtic Sea Salt
1/3 cup chopped cilantro
Instructions:
Put cashews in a blender and blend until finely ground. Add 1 cup of water and blend for 3 minutes. Pour the ground cashew mixture into a bowl. In a large pot, heat the coconut oil over low heat. Add the onions and sauté until golden. Add the cauliflower, coconut milk, cashew milk, curry powder, turmeric, cumin, stevia, cinnamon and salt. Add enough water to cover. Bring to a low boil, reduce heat and simmer until cauliflower is tender, about 10 minutes.
