Avocado and Quinoa Salad

Ingredients
- 1 1/2 cups quinoa - cooked, dry, chiled
- 1 red onion, finely chopped
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 tablespoons white wine vinegar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Celtic sea salt to taste
- 1/2 cup fresh parsley, finely chopped
- 2 ripe avocados, sliced thin
Instructions:
Combine the olive oil, lemon juice, vinegar, chili powder, cumin, salt and parsley in a small bowl and whisk thoroughly. Pour the dressing over the cooked quinoa and toss well. Arrange avocado slices on top and serve in small bowls.
