Egg & Greens Bake


  • 8 organic eggs
  • 1 medium head of broccoli, chopped
  • 1/2 large onion, diced
  • 2 medium zucchini, diced
  • 1 tsp Celtic salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp fresh parsley, chopped

Preheat oven to 350 degrees F. In a small bowl, whisk eggs with salt and pepper. Stir in the chopped veggies. Grease a dish with coconut oil spray. Pour the mixture into the dish and bake for 30-35 minutes. Garnish with parsley.
